Food Series: Gingerbread

Hey everyone.

For my first post in my new food series, I’m going to share with you a quick and easy recipe that I have been in love with recently – for Gingerbread.

13 minutes preparation; 30 minutes refrigeration; 10 minutes cooking; makes about 22

125g softened butter
85g brown sugar
175ml golden syrup
375g plain flour
2tsp ground ginger
1tsp bicarbonate of soda

1) Preheat the oven to 190°C/375°F/Gas Mark 5. Put the butter and sugar in a bowl and beat for 10 – 12 minutes until light and creamy.
2) Add the golden syrup, flour, bicarbonate of soda and ginger and beat until smooth. Refrigerate for 30 minutes.
3) Roll out the dough between sheets of non–stick baking paper to around 4mm thick. Using cutters of your choice, cut the shapes out of the dough. Re–roll any left over dough to make as many as you can.
4) Place on lined baking trays and bake for 8–10 minutes until golden.
